Cheesecake without cooking pan di stelle and ricotta

Here we are, there are a few hours left for the celebrations, the masks, the monstrous make-up, one of the few days in which to return to feel a bit like a child. The classic motto “Trick or treat ?!” He really inspired us in the preparation of this dessert. If you also have friends who invite themselves to your home for the Halloween party almost at the last minute, we have the solution for a good and effective dessert, because its final, themed decoration will leave everyone speechless, not to speak of goodness. What sweet is it? What cake could ever be more suitable for the celebrations of this purely American tradition if not one Cheese cake uncooked? And as if that were not enough, even more delicious because it is prepared with a biscuit base, but not the usual dry biscuits, but the famous Pan di Stelle cocoa biscuits.

Ingredients for 6 people

  • Pan di stelle biscuits: 200 g
  • Butter: 100 g
  • Ricotta: 200 g
  • Powdered sugar: 250 g
  • Fondant fondant for decoration: to taste

Preparation

First, finely chop the biscuits with the mixer, or with the help of a rolling pin, any brand of dry cocoa biscuits are fine.

Then, add the melted butter to the bowl with the chopped biscuits, mixing well.

First cover the base of a previously greased springform pan, press a little with a spoon so that the dough compacts well on the bottom and, after covering the base, move to the edges of the pan, positioning it vertically and by rotating it on the support base. Pour a spoonful of dough on the sides, mash well and rotate, pour another spoonful of dough and so on …

After covering the base and edges of the pan, let it cool in the fridge for about half an hour.

In the meantime we can already move on to the cream. In a bowl, mix together the Philadelphia with the sugar and the ricotta, until it forms a smooth cream.

Once the cream is obtained, we cover the biscuit base that we had placed in the fridge with the cream.

We leave the cake again in the fridge to rest until ready to serve it, remember that it must be served very cold.

In the meantime, we can prepare a very simple decoration for the cake: on a sheet of baking paper, with the help of the pastry bag, we form a spider web of melted chocolate. It is very simple, just start from an “x” in the center of the sheet of paper and continue with a large “+” sign above the “x” and joining with lines all the “V” angles we have created, just like we did in the photo.

Let the decoration dry until the chocolate solidifies again. Only when it is completely dry can we gently peel it off the baking paper and place it on the cheesecake.

All that remains is to remove the hinged mold, add some other decorations suitable for the “trick or treat !?” and serve the cheesecake.
