Not loving too elaborate desserts, my choice often falls on tarts. This time it was the turn of the pear and chocolate tart, a dessert of one creamy goodness you don’t expect. Accustomed to the classic jam tart, this filling rich in taste and content really surprised me. The preparation is pretty simple, just little more laborious than the classic version, but it’s worth it. It starts with a shortcrust pastry base, even without butter or gluten, and then moves on to the creamy filling based on chocolate and cream. The whole is completed by excellent pears, even in syrup. With this sweet pears and chocolate you will make a great impression and conquer even the most demanding palates.

Ingredients for 8 people

  • 00 flour: 250 g
  • water: 65 g
  • seed oil: 35 g
  • extra virgin olive oil: 35 g
  • sugar: 125 g
  • yeast sachet: 1
  • pears: 2
  • dark chocolate: 160 g
  • powdered sugar: 50 g
  • egg: 1
  • fresh cream: 200 ml
  • Preparation: 15 minutes
  • Cooking: 35 minutes
  • Total: 50 minutes

Preparation

First, melt the chocolate in a bain marie.

Then add the cream, egg and sugar, mixing quickly until it forms a cream. Allow to cool and in the meantime prepare the pastry.

In a bowl, dissolve the sugar in the water, then add the oil and mix to create an emulsion.
Then add the flour and baking powder and mix first with a spoon then with your hands, until it forms a loaf that you will leave to rest in the refrigerator for at least an hour.
Then roll it out up to a thickness of half a centimeter with the help of parchment paper below and film above.

Transfer it to a tart mold by trimming the edges and piercing the bottom.

Pour the chocolate cream and decorate with the peeled and sliced ​​pears.
